The wines that do not go through MLF will have more green (unripe) apple tastes than those that do go through MLF. Oak can be incorporated during the fermentation process or after the fermentation process in the form of barrel aging. Depending on the quantity of charring that was applied to the wood, this might impart a "tastiness" and tastes to the wine that many wine consumers mistake for characteristics of the grape variety itself. Jam Cellars is a California wine producer named after its founders John and Michelle Trushard. It produces Cabernet Sauvignon and Chardonnay from fruits grown in the state, although the winery is based in the Napa Valley. It was founded in 2009 to enter a market focused on good value wines under $20. John and Michelle had already founded the John Anthony Wines boutique winery in Napa in 2003, but after the 2008 economic meltdown, premium wines took off. difficult to sell, while cheaper bulk wines were still popular. As a result, the couple - along with winemaker Rob Lloyd - sought to create a larger wine brand to match the smaller John Anthony wines. The first Cabernet Sauvignon jelly was launched in 2009 and was originally derived from the Napa fruit. As demand and production increased, Chardonnay oil was added and greater sources of fruit had to be sought. Jelly wines now come from various regions, such as Mendocino and Santa Barbara counties, and the wines have a broad California designation. From the 1,000 original cases made in 2009, Jam production grew to over 450,000 cases in 2015. Toast Sparkling Chardonnay was also added to the lineup. In 2014, Jam Cellars teamed up with actress Gabrielle Union to create and release a 2012 limited edition. Vanilla Puddin' branded Chardonnay.
