Producer Information: Savage & Cooke
Savage & Cooke is a California spirits producer based on Mare Island in Vallejo, a former naval shipyard on the San Francisco Bay, founded by vintner Dave Phinney, best known for Orin Swift and The Prisoner. The distillery reflects Phinney’s wine-country sensibility, using careful blending, distinctive cask finishing, and a strong focus on texture, aroma, and sense of place rather than rigid tradition. Its portfolio spans bourbon, rye, American whiskey, and pre-Prohibition-inspired expressions, often shaped by barrels tied to California wine culture. Notable releases include Burning Chair Bourbon, Second Glance American Whiskey, Lip Service Rye, Bad Sweater Whiskey, and Ayate Tequila, giving Savage & Cooke a clear identity at the intersection of Napa-influenced craftsmanship and Bay Area distilling.

American Whiskey: Origins, Flavor & Pairing Guide
View All American Whiskey Products →American Whiskey is a distinct category of distilled spirits primarily made from grains such as corn, rye, barley, and wheat. This spirit is characterized by its unique distillation methods—either pot still or column still—and is aged in new charred oak barrels. The aging process varies by type; for instance, straight whiskey must be aged for a minimum of two years. The flavor profiles differ significantly among styles: Bourbon offers sweet notes of caramel and vanilla with hints of spice, while Rye Whiskey presents a spicier character with peppery undertones and citrus hints.
The texture of American Whiskey can range from smooth to rich, depending on the specific style being enjoyed. Regions like Kentucky are renowned for Bourbon production, while Tennessee is known for its mellow Tennessee Whiskey that often undergoes charcoal filtering. Commonly used in classic cocktails such as the Old Fashioned and Manhattan, American Whiskey can also be savored neat or on the rocks. Understanding terms like mash bill and proof further enhances appreciation for this versatile spirit.
