Tasting Notes and Characteristics:

Silky and warming, Siete Leguas Reposado Single Barrel Tequila has the easy elegance of a slow evening pour, whether sipped neat or alongside a rich meal. Bottled at 40% ABV, this Mexican tequila is made from blue Weber agave and rested in oak as a reposado, with the single barrel selection giving each bottling a distinct, expressive character.

Expect cooked agave, vanilla, light caramel, pepper, oak spice, and a touch of citrus or herbal freshness. With grilled steak, its oak and spice echo the char while the agave sweetness balances savory juices. With mole chicken, the tequila’s caramel, spice, and earthy agave notes sit beautifully beside chile, cacao, and roasted flavors.

Producer Information: Tequila Siete Leguas

Tequila Siete Leguas is based in Atotonilco el Alto, Jalisco, in Mexico’s Los Altos tequila region. The distillery was founded in 1952 by Don Ignacio González Vargas and takes its name from the horse associated with Pancho Villa. Its production is centered on mature Blue Weber agave, slow cooking in masonry ovens, fermentation with agave fibers, and distillation in copper pot stills. The house is known for preserving traditional tequila methods while maintaining precise control over agave sourcing, cooking, fermentation, and maturation.

The Siete Leguas portfolio focuses on 100% agave tequila across classic age categories, including Blanco, Reposado, Añejo, and Extra Añejo expressions. It also produces limited and specialty releases such as D’Antaño and Décadas, which highlight extended aging, barrel selection, and the character of highland agave. Rather than branching into beer, whiskey, or other spirits, the producer has built its identity around tequila, offering bottlings that range from bright, peppery, and herbaceous to oak-aged styles with vanilla, baking spice, cooked agave, and dried fruit notes.

Tequila: Origins, Flavor & Pairing Guide

Tequila is a distilled spirit made primarily from the blue agave plant (Agave tequilana), predominantly produced in the Jalisco region of Mexico, along with some areas in Guanajuato, Michoacán, Nayarit, and Tamaulipas. This unique spirit undergoes a meticulous distillation process, typically involving double distillation in pot stills or column stills. Tequila is categorized into several types based on its aging process: Blanco (unaged or aged less than 2 months), Reposado (aged between 2 months and 1 year), Añejo (aged between 1 and 3 years), and Extra Añejo (aged over 3 years). Each type offers distinct flavor profiles ranging from fresh and herbal to rich and complex.

The flavor and aroma of tequila vary significantly across its categories. Blanco tequilas are known for their crisp texture with fresh citrus notes, peppery hints, and agave sweetness. Reposado tequilas present a softer profile with vanilla and caramel undertones derived from oak aging. Añejo varieties boast richer flavors such as chocolate, coffee, and dried fruit alongside pronounced oak influence. Extra Añejo tequilas deliver complex layers of deep wood characteristics combined with smoothness. Tequila is versatile in cocktails; it serves as the base for popular drinks like Margaritas, Tequila Sunrises, Palomas, and various craft cocktails that highlight agave spirits.
