This 100% rye whiskey starts with pure, traditionally grown rye grains. All of our top crops are grown exclusively for us at Omlin Family Farm in Quincy, Washington. The beans are crushed, distilled and barred at our Woodinville still, then transported back across the Cascade Mountains to our private homes, where the extreme temperature cycles of downtown Washington extract natural flavors from the oak. Before being processed into cooking, the barrels are kept outdoors in rain, wind, sun and snow for eighteen months, softening the rough tannins of the wood. The barrels are then slowly roasted and heavily charred to further enrich the desired wood aroma.
