Oak can be incorporated during the fermentation process or after the fermentation process in the form of barrel aging. Depending on the quantity of charring that was applied to the wood, this might impart a "tastiness" and tastes to the wine that many wine consumers mistake for characteristics of the grape variety itself. William Hill Estate is located in southern Napa Valley, right next to the famous Silverado Regional Trail. A wide selection of wines is produced here, among which Cabernet Sauvignon and Chardonnay stand out. The property is located on 200 acres (80 hectares) of land in the southeast of the valley, on the Silverado Bank, at the foot of Atlas Peak. Here, the cooling effect of San Pablo Bay contributes to the long growing season. Flat stony soils are of low fertility and cause the vines to strain and produce small yields of highly concentrated fruit. They contrast with the rich sandy clay of the valley floor. Vineyards vary in height and exposure, and some vineyards are found in the most fertile lowlands. Each block is vinified separately. William Hill's iconic wine, the Benchmark, comes from the estate's finest vineyard blocks. It's only made in small quantities - just over 200 cases a year. This is a blend based on Cabernet Sauvignon. Smaller amounts of Malbec, Merlot and Petit Verdot may also be present, depending on the crop. There are several other wine collections: Benchland Series: Cabernet Sauvignon and Chardonnay from selected estate locations and Napa Valley partner vineyards: Cabernet Sauvignon and ChardonnayCoastal main editions: North Coast Chardonnay, Sauvignon Blanc and Cabernet Sauvignon and Central Coast Wine Pinot Noir Series: wines in small batches, which are sold exclusively in the winery's tasting room and in the winery's online store.
