Oak can be incorporated during the fermentation process or after the fermentation process in the form of barrel aging. Depending on the quantity of charring that was applied to the wood, this might impart a "tastiness" and tastes to the wine that many wine consumers mistake for characteristics of the grape variety itself. Luis Felipe Edwards is an important Chilean winery, producing more than 2.5 million cases per year and exporting to over 85 countries. This property was named Best Chilean Winery of the Year at the 2012 London International Wine Fair. The property was founded in 1976 by Luis Felipe Edwards Sr. when he purchased an old winery in his own valley at Pukillai in Colchagua. The original vines at the bottom of the valley date back to the 1930s, while other vines were planted in terraces along the sides of the valley. Colchagua's second vineyard, Santa Bernadita de Pupilla, is much closer to the Pacific Ocean, in flatter lands that are easier to work. ... Bulk wines were produced until 1994, when a new winery was built in Pukillai. The plantations are mainly Cabernet Sauvignon, Merlot and Syrah. The family also purchased 160 hectares (395 acres) of cool climate vineyards in the Leida Valley, which are concentrated in Chardonnay and Sauvignon Blanc. The eldest son, Luis Felipe Jr., now controls the company, aided by many other family members.
