Producer Notes: Tequila Ocho SA de CV
Tequila Ocho SA de CV is a premium tequila producer based in the town of Arandas, in the highlands of Jalisco, Mexico. The company was founded in 2006 by Tomas Estes, a renowned tequila expert and ambassador, and Carlos Camarena, a fifth-generation tequila maker. Together, they set out to create a tequila that would showcase the unique terroir of the Jalisco highlands, and the traditional methods of production that have been passed down through generations of tequila makers.
Tequila Ocho is made using only 100% blue agave, which is grown on the Camarena family’s estate, Rancho La Latilla. The agave is harvested by hand, and cooked in traditional brick ovens, before being crushed using a tahona, a large stone wheel that is pulled by a mule. The juice is then fermented using natural yeasts, and distilled twice in copper pot stills. The resulting tequila is aged in oak barrels for varying lengths of time, depending on the expression.
Tequila Ocho is known for its terroir-driven approach, which means that each expression is made from agave grown in a specific field, or “rancho”, and is named after that field. This allows drinkers to taste the unique characteristics of each terroir, and to appreciate the nuances that come from the soil, climate, and altitude of each location.
In addition to its flagship tequila, Tequila Ocho also produces a range of other spirits, including La Venenosa Raicilla, a traditional Mexican spirit made from the agave plant, and Tequila Cabeza, a small-batch tequila that is also made using traditional methods.
Overall, Tequila Ocho SA de CV is a highly respected and innovative producer of premium tequila, with a focus on quality, tradition, and terroir. Its products are enjoyed by tequila connoisseurs and casual drinkers alike, and are widely regarded as some of the finest tequilas available today.
