Producer Notes: Tequila Ocho
Tequila Ocho is a premium tequila producer that is based in the town of Arandas, located in the highlands of Jalisco, Mexico. The company was founded in 2008 by Tomas Estes, a renowned tequila expert, and Carlos Camarena, a fifth-generation tequila distiller. Tequila Ocho is known for producing high-quality, artisanal tequilas that are made using traditional methods and the finest agave plants.
Tequila Ocho’s tequilas are made using only 100% blue agave, which is grown on the Camarena family’s estate in the Los Altos region of Jalisco. The agave plants are harvested by hand and cooked in traditional brick ovens before being crushed using a tahona, a large stone wheel that is pulled by a mule. The resulting juice is then fermented using natural yeasts before being distilled twice in copper pot stills.
One of the unique features of Tequila Ocho’s tequilas is that they are vintage-dated, meaning that each bottle is labeled with the year and location of the agave harvest. This allows consumers to taste the distinct flavors and characteristics of each harvest, which can vary depending on factors such as weather, soil, and altitude.
Tequila Ocho produces several different types of tequila, including blanco, reposado, and añejo. Their blanco tequila is unaged and has a crisp, clean flavor with notes of citrus and pepper. The reposado is aged for eight weeks in American oak barrels, which gives it a smooth, mellow flavor with hints of vanilla and caramel. The añejo is aged for 12 months in oak barrels, which gives it a rich, complex flavor with notes of chocolate, coffee, and dried fruit.
In addition to their tequilas, Tequila Ocho also produces a range of other spirits, including mezcal, sotol, and raicilla. Mezcal is a type of agave spirit that is similar to tequila but is made using different types of agave plants and production methods. Sotol is a spirit that is made from the Desert Spoon plant, which is native to northern Mexico. Raicilla is a type of agave spirit that is made using wild agave plants and is traditionally produced in the state of Jalisco.
Overall, Tequila Ocho is a highly respected and innovative producer of premium tequilas and other spirits. Their commitment to traditional
