About the Producer: Paolo Saracco

Paolo Saracco is an Italian wine producer based in Castiglione Tinella, in the northwestern region of Piedmont. The estate specializes in the production of Moscato d'Asti wines, as well as Lange Chardonnay, Riesling and Pinot Nero wines. The Saracco family originally started their wine business in the early 20th century when they started selling their wines to vermouth companies. In the second half of the century, the company expanded its ownership of vineyards and therefore wine production, selling its wines to Asti Spumante producers. In 1988, Paolo Saracco took over the management of the family business, founding the Paolo Saracco estate and his own brand, Moscato d'Asti. The property includes a total of 50 hectares (124 acres) of vineyards, predominantly in the Castiglione area. Tinella with small properties in Santo Stefano Belbo, Castagnole Lanza and Calosso. The vines are mainly planted in soils, which are usually composed of sand, clay and limestone. Moscato d'Asti continues to be the flagship wine of the farm and is produced according to the so-called Asti method. First, Muscat Blanc Ă  Petits Grains are carefully pressed and the wort stored in chilled stainless steel containers. This is followed by temperature-controlled fermentation, microfiltration and bottling. Paolo Saracco also produces Moscato grappa at the Giovi distillery in Sicily.
