Producer Information: E. & J. Gallo Winery
E. & J. Gallo Winery, founded in 1933 by brothers Ernest and Julio Gallo in Modesto, California, emerged from the heart of the Central Valley’s agricultural landscape just after Prohibition ended. Their approach has always centered on harnessing the region’s fertile soils and Mediterranean climate to produce approachable wines for a broad audience while maintaining a focus on innovation and sustainable viticulture. Beyond their flagship Gallo Family Vineyards, they have expanded into premium labels like Louis M. Incredible aromas of pine tree, mineral, cigar box and tobacco leaf but then it turns to currants and black truffle. Forest fruit and forest floor. Soya. Full body, round and decadent with a combination of ripe fruit and earth, spice and long finish. The uniqueness of Pavot is streaming here.

Robert Parker's Wine Advocate
The 2014 Proprietary Red Les Pavots (3,570 cases) is a blend of 60% Cabernet Sauvignon, 20% Cabernet Franc, 13% Merlot and 5% Petit Verdot aged in mostly Taransaud barrels with a small helping of Darnajou thrown in. This wine is fabulous in the vintage, although certainly less profoundly concentrated and extracted, as well as structured, compared to the 2013, which was off-the-charts fabulous. This is a brilliant wine, charming, with front-end loaded plum, blackcurrant and black raspberry fruit interwoven with graphite, tar and truffle notes. The wine has sumptuous texture, sweet, velvety tannin, and a long, full-bodied finish.

Wine Spectator
Well-centered on rich, dark berry fruit that is firm and direct, with subtle flavors filling in the gaps and ending with tannins that give the flavors traction and structure. Cabernet Sauvignon, Cabernet Franc, Merlot and Petit Verdot. Drink now through 2034.
Chablis is a renowned white wine from the Burgundy region of France, primarily made from the Chardonnay grape variety. This wine is celebrated for its crisp, mineral-driven profile characterized by high acidity and flavors of green apple and citrus fruits, often accompanied by a distinctive flintiness that reflects its unique terroir.
The aromatic experience of Chablis includes notes of lemon zest, green pear, white flowers, and wet stone, with a hint of almond adding complexity. Typically light to medium-bodied, it features a steely backbone and a refreshing finish. Ideal food pairings include oysters and seafood dishes like shellfish, as well as poultry in cream sauce or goat cheese salad. For optimal enjoyment, serve Chablis chilled at 45–50°F (7–10°C) in a standard white wine glass.
