Nikka’s first distillery opened in 1934, and this single malt hails from that establishment. Yoichi in Hokkaido was chosen by founder Masataka Taketsuru because of its proximity to the climate and geography of Scotland, where he had studied whisky production. Traditional direct coal-fired distillation gives Yoichi single malt its pleasing peaty flavors and smokiness; the sea air adds a briny hint during the aging phase.

The original Nikka distillery was established at the namesake town on Hokkaido’s western coast. The essence of success in this case is authority. In addition to the smoke and the deep, rich oiliness (something between linseed and cod liver), I pick up hints of smokiness and black olives in brine, and in the background, I find ripe apples. Yoichi is the Japanese single malt that most closely resembles Springbank, a Scotch single malt, if I were to make a comparison (edging into Longrow). I prefer my beverages without water, where the flavor is bold and uncompromising. A layered whiskey, with coal-like, oily, highly fruited, and noticeable saltiness on the sides, it proves that Japan has almost as much variety to give as scotch on the palate rather than displaying a leisurely procession of tastes down the tongue.

Masataka Taketsuru, the creator of Nikka and often called the “father of Japanese whisky,” sprung from a family of sake brewers as far back as 1733. He studied chemistry since he was destined to carry on his family’s business of distilling spirits, and the spirits corporation Settsu Shuzo promptly snapped him up. In 1918, Settsu Shuzo dispatched Taketsuru to Scotland in an effort to start a whisky production line for Japanese whisky. He became the first Japanese student to ever study whisky production at Glasgow University. He studied chemistry in college and worked as an apprentice in distilleries, where he gained knowledge directly from masters and honed his skills as a blender. In the course of his apprenticeship, Taketsuru met the Scottish woman with whom he would later fall deeply in love: Jessie Roberta Cowan. An further year passed before they tied the knot. Jessie renamed herself Rita and relocated to Japan with Taketsuru; she would go on to serve as his inspiration and pillar of strength for the rest of his life.
