Oak can be incorporated during the fermentation process or after the fermentation process in the form of barrel aging. About the Producer: Mer Soleil Vineyard

Mer Soleil is a California based winery that was founded in 1988 in the Santa Lucia Highlands AVA in Monterey by the famous Wagner family on Caymus. It is known for its wines made from Chardonnay in the most varied expressions. The vineyard is divided into two sections in the Santa Lucia highlands and gets its name from its proximity to Monterey Bay - la mer means sea and le soleil means sun. The refreshing effect of the sea means that the period of ripening and subsequent harvesting means that the grapes can retain their acidity as they ripen, resulting in balanced and complex wines. The Wagner family founded several other well-known California wine brands: Caymus, Conundrum, Emmolo and Red Schooner. The family began winemaking in Napa Valley after buying 28 hectares (70 acres) of land in 1906. The winery was founded in 1915, but production was short-lived with the passage of Prohibition in 1919. It entered the wine business with the launch of Caymus Vineyards. Sixteen years later, Chuck Wagner expanded and began planting Chardonnay vines in the Santa Lucia Highlands appellation, starting the production of Mer Soleil Chardonnay. In 2001, Chuck's son Charlie F. Wagner II took over the reins and in 2005 created the Silver Chardonnay label. "Reserve" and "Silver Chardonnay" wines differ in the form of fermentation. Chardonnay Reserva is fermented and aged in French oak barrels for 12-15 months, with only a small amount undergoing malolactic fermentation. In the case of Silver Chardonnay, a more modern fermentation method is used and the wine is fermented and aged in stainless steel and concrete tanks.
