The domain is known for displaying the different characteristics of the Loire terroir through its laid-back approach to winemaking and bottling Sauvignon Blanc with one appellation. The domain is 42 hectares (103.8 acres) in Sancerre and 8 hectares (19.8 acres) in Pouilly. Foumé and 15 hectares (37.1 acres) in Touraine. These 65 hectares (160 acres) account for 50 percent of production, with the rest coming from buying grapes or grape juice. The grapes - mainly Sauvignon Blanc and some Pinot Noir - are usually hand-picked and vinified separately, depending on the origin, to give expression to the terroir. Sancerre grapes come from limestone, flint and clay soils, while Pouilly-Fumé grapes come from a wide variety of ice age entrails. Pascal Jolivet created his wine brand in 1987 and invested in his first stainless steel winery, temperature. - tanks managed in 1990. In 1991, it made its first harvest by natural fermentation, which did not add yeast to start the fermentation process. This, together with the use of gravity in the winery and the long maturation of the lees, became part of Jolivet's home style.
