Our vineyards, which are situated in the historic Judean Hills region, lend their distinctive personality and high quality to the 2016 vintage of Judean Hills Blanc. The Chardonnay and Sauvignon Blanc grapes that go into making this wine were cultivated on historic terraces and account for 90% of the final product. Terra-Rosa can be found closer to the surface, and limestone makes up the subsoil. The wine underwent a fermentation process at a low temperature and was aged Sur-Lie for a total of eight months in both French barriques and stainless steel tanks. In order to protect the wine’s inherent acidity and maintain its natural level of freshness, the wine did not go through the malolactic fermentation process. It is drinking well right now, and over the following two to three years, it will continue to mature in the bottle.
