Del Maguey Chichicapa Mezcal is a distinct spirit that embodies the rich tapestry of Oaxacan tradition. Crafted from 100% mature EspadĂ­n agave, this artisanal mezcal is produced in the village of Chichicapa, nestled about two hours south of Oaxaca city. The terroir imparts a unique character to the agave, which is meticulously harvested and roasted in earthen pits lined with volcanic rock, infusing the heart of the plant with a subtle smokiness.

The process continues as these roasted piñas are crushed under a stone wheel known as a tahona, extracting their juices for fermentation. Natural airborne yeasts play their part here, ensuring that each batch carries its own signature profile. The fermented agave juice then undergoes double distillation in copper stills—a method that retains the essence and purity of flavor.

Del Maguey is a renowned producer of fine spirits, hailing from the vibrant country of Mexico. They are best known for their exceptional Mezcal, a type of liquor that’s made from the heart of the agave plant. This drink is famous for its unique smoky flavor and rich heritage.

The company was founded by Ron Cooper, an artist who fell in love with the traditional methods used to create Mezcal during his travels in Mexico. He decided to share this passion with the world by establishing Del Maguey in 1995.

Del Maguey’s Mezcals are crafted in small villages scattered across Oaxaca, a region known for its diverse climates and landscapes. Each village has its own distinct style and method of production, which results in a wide variety of flavors and aromas within Del Maguey’s range.

One standout product is their Single Village Mezcal series. These spirits capture the essence of each village’s unique terroir – that’s a fancy word meaning how the climate, soil, and other environmental factors affect how something tastes.
