While demand for this light red wine has risen significantly, the grape is notoriously temperamental and difficult to cultivate. As a result, wine prices have risen in recent years. The drinking of Pinot Noir wines may be traced back to the first century, when the ancient Romans reported doing so shortly after conquering most of the Gaul area, which is now France. There is no clear proof as to when the grape was originally fermented and consumed, although it has been around for quite some time.

Cavit (entirely Cantina Viticoltori del Trentino) is a large Italian wine cooperative based in Trentino. It produces a wide selection of wines of all styles, the most popular being Pinot Grigio. Cavit offers a variety of wines featuring the common Trentino grape varieties and styles at different price points, but is perhaps best known for its value. - Prepared Italian varietal wines. This series is known as the Cavit Collection and is intended for the US market. It includes international varieties such as Cabernet Sauvignon, Merlot, Pinot Noir and Chardonnay, as well as the popular Prosecco produced in neighboring Veneto. The cooperative was founded in 1950 among winegrowers from Trentino who wanted to promote their fruits and the region. ... In 1957 it bought its first winery and, in 1964, the central development, Ravina di Trento, was built. Cavit now has 10 wineries across the region in the districts of Valdadige, Valle dei Laghi, Vallagarina and Alto Garda, and also brings together more than 4,500 grape growers. Cavit oversees every stage of the winemaking process, which is why common standards and practices are followed in all companies. The cooperative works in collaboration with the Edmund Mach Foundation, a wine and agricultural research institute formerly known as the Istituto Agrario di San Michele all'Adige. Kavit also owns a 6.5-hectare (16-acre) property on Lake Toblino. A feature of the property is the Maso Toresella, a 16th-century villa that is featured on many Cavit wine labels. The villa is the source of the I Masi Trentini collection, co-created with the Edmund Mach Foundation.
