The “Sauvignon” is very characteristic for its freshness and aroma, giving rise to a dry fruit wine. The typicality is due to the landscape – a geological layer that dates from secondary formations that extend on both sides of the Sancerre Fault, and Jurassic limestone. The Le Blanc variety is cultivated on hillsides (up to 40% slopes) as well as on limestone and very rocky plateaus – the so-called “cayottes” – which give Sancerre Blanc this special flavor.
