The vineyards collect batches at different times to ensure optimal natural acidity and moderate alcohol levels. Whole berries are manually loaded into small fermentation containers and barrels of 225-500 liters; batches of each vine are processed individually; fermentation and maceration takes 28-30 days; cold maceration. The yeast is wild. Alcoholic and apple milk fermentation in barrels; wine is actively beaten to protect it and drastically reduce the amount of SO2. Matured for 18 months in French oak.
Katena Zapata, the most awarded winery in Argentina, was founded in 1902 by Italian emigrant Nicola Katena. The family winery is known for its pioneering role in the rebirth of Malbec and the discovery of extreme altitude terroirs in the Andean foothills of Mendoza.

For over 100 years, four generations of the Katena family have shaped the future of Argentina’s oldest winery, still in family hands. Each generation played a role: Nicola, the founder, sailed from the Italian city of Le Marche to the New World in 1898 to fulfill his dream of planting a vineyard in Malbec. His son, Domingo Vicente Catena, was named “Master Blender” for his ability to make delicious blends of red grapes from the Uko Valley.
Bodega Katena Zapata is one of the pioneers of Alpine Malbec in Argentina. The Katena family started making wine in Mendoza in 1902. Nicholas Katena, a third generation winemaker of the family, was one of the first to see the potential of the Mendoza mountain vineyards to produce high quality Malbec wine. In 1994 he became the first Argentinean to produce a world-class Malbec bottling under the Catena brand. Nicholas joins his daughter, Dr. Laura Catena, in a relentless search for the family’s high quality vineyards. Laura has done great work in introducing Malbec breeding and other plant varieties, soil and climate analysis, as well as sustainable methods in Mendoza. The chief winemaker Alejandro Vigil has been working with Catena Zapata since 2002 and is working with Laura and Nicolas to make wines that express the vines and the taste of the family.

Malbec is a full-bodied, rich red wine with dark, intense notes. It has lovely black fruit tastes, as well as spice aromas and floral undertones on occasion. Malbec has varying degrees of complexity depending on the winemaker and the area where it is produced. Malbec is a wine with a rich purple hue and a substantial body. Malbec grapes are tiny, dark-colored, and have thick skins, resulting in a wine with rich fruity flavors and mild tannins. Malbec has a greater alcohol content than Merlot or Pinot Noir.
