Carnivor Cabernet is a California table wine made primarily from Cabernet Sauvignon grown in Lodi. The wine is made from very ripe grapes and has a bright character, deep color and dark fruity aromas. It is manufactured in Modesto, California by E. & J. Gallo. The grapes are machine-harvested and then soaked in the cold to extract the tannin and dye. Fermentation lasts from four to six days, with the wine being aged in oak and then mixed with a small amount of Petite Sirah, which improves the color and structure of the final wine.
