Baileys accounts for more than half of all alcoholic beverages exported from Ireland and produced in Dublin and Mallusk. The recipe includes Irish whiskey, sugar, cocoa extract and cream. The whiskey is sourced from several distilleries across the country and around 220 million liters of fresh milk from more than 38,000 dairy cows are used to make the cream of the liqueur every year. The cream and alcohol are mixed with Irish whiskey and homogenized with an emulsifier containing refined vegetable oil to prevent the liquids from separating during storage. Alcohol retains the cream, allowing the liquor to last two years. Baileys Original is the best known and most widely sold product in the portfolio, but Irish cream is made with a range of complementary flavors such as vanilla, chocolate cherry, salty caramel and espresso.
