400 Conejos Mezcal Cuishe - Item Code: 07470
Discover 400 Conejos Mezcal Cuishe:
400 Conejos Mezcal Cuishe is a spirit that embodies the rich tapestry of Oaxacan tradition, distilled from the wild agave Karwinskii, known locally as Cuishe. This particular agave species is renowned for its tall, slender profile and its propensity to grow in arid conditions on rocky slopes, which imparts a unique terroir to the mezcal.
Upon nosing this mezcal, one can expect an aromatic bouquet that weaves together hints of earthy minerals with a subtle undercurrent of citrus zest. The palate is greeted with a complex interplay of flavors; there’s a smoky character typical of traditional mezcals that’s deftly balanced by notes reminiscent of green chili and a touch of sweetness akin to ripe tropical fruits.
The production process adheres to time-honored methods where the Cuishe agave hearts are cooked in earthen pits lined with volcanic rock, acquiring their signature smokiness. Afterward, they are crushed using a tahona (a stone wheel), fermented naturally with airborne yeasts in open-air vats, and finally distilled in copper pot stills.

Mezcal Varieties
In Mexico, mezcal (also known as mezcal de agave) is a distilled alcoholic beverage derived from the agave plant, a slow-growing succulent that is native to Mexico and parts of Texas and is used to make mezcal. Mezcal was first produced in the 16th century by the conquistadors, who, as invading armies are wont to do in hostile territory, made getting drunk a top priority and experimented with distilling whiskey from whatever they could find in the area they were occupying.
The history of mezcal-making evolved over time to become an essential element of Mexican culture, but it wasn't until Prohibition drove thirsty American visitors to Mexico in pursuit of a legal buzz that mezcal became widely known to drinkers in the United States and around the world.
Mezcal can be prepared from any of the more than 30 different types of agave. Tobalá, tobaziche, tepeztate, arroqueo, and espadn are the most frequent agave varieties used for mezcal production. Espadn is the most prevalent agave variety and accounts for up to 90 percent of all mezcal production.
